Spit of land between two seas, we are in the heart of Salento where the climate is mild in winter with very hot and little rainy summers. It is a land of great red wines with old sapling vineyards and new espalier systems created by preserving the traditional Salento vines.

The grapes are de-stemmed, gently pressed, conditioned and conveyed into the fermenters. These stainless steel tanks are equipped with a refrigeration pocket that allows you to monitor the temperature of the must.
Controlled fermentation allows to obtain high quality products without risks of alterations which would adversely affect the organoleptic characteristics of the product.
After the malo-lactic fermentation, the wine makes a brief stop in the oak barriques. The short contact with the wood brings sweet vanilla and toasting notes. At the right time, the wine is racked into stainless steel tanks, following its refinement in the bottle.
Red in color, with a wide range of aromas, red berried fruits and spicy notes are typical of Susmaniello. It is a full-bodied red, very persistent.
It goes well with cheeses, seasoned meats and grilled meats, pasta dishes with sauce.
