Vinification: the grapes are left on the vines for about a month despite already being ripe; in this way, the grapes lose water by transpiration and the sugars and phenolic compounds are concentrated. The grapes are de-stemmed, delicately pressed, conditioned and conveyed into the fermenters. These stainless steel tanks are equipped with a refrigeration pocket that lets you monitor the wort’s temperature. Controlled fermentation lets you obtain high-quality products without the risk of alterations that would negatively affect the organoleptic characteristics of the product.

Colour: intense red with violet hues.

On the nose: it releases strong fruity hints at the same time, while cocoa and spices stand out.

On the palate: it is an elegant wine, smooth and with a long persistence.

Food pairings: it pleasantly accompanies first courses, roasts, red meats, game, cured meats and aged cheeses
